- Take a broad pan, add oil,ginger garlic paste,chopped tomato(I use very less khatta tomatoes,which is called apple tomatoes) chopped onions and turmeric powder,fry this mixture for few min,then add chilli powder and dhania masala.mix this well and leave it for 2 min.
- Then add dry coconut paste,and mix this well,at this point the mixture becomes thick so just add a little water to dilute the coconut paste,this helps to thicken our gravy and also gives a very different taste as compared to fresh coconut paste.you need to fry this paste well and make sure the smell of the coconut paste evaporates.
- Now slowly start adding more water to form gravy,make sure the consistency of the gravy is not too thick nor too thin.add salt as per taste.
- Once the water starts to boil,you need to slowly break eggs into this gravy one by one and apart from each other.close the lid and let the eggs cook in the gravy.
- Keep a check and slowly move your spatula along the eggs to make sure they are not stuck with each other.you can see the oil standing on top and the eggs are cooked.sprinkle some coriander on top.
