  1. You need 1 kg Mutton
  2. Use 2 tbsp curd
  3. Provide 2 tsp each Chilli powder, Coriander powder
  4. Take 1/2 tsp Turmeric powder
  5. Prepare 3 Onion thinly sliced
  6. You need 2 tbsp Ginger garlic paste
  7. Take 2 Green chillies slit lengthwise
  8. Take as required Oil
  9. Get 1 Bay leaf
  10. Use 1 tsp each Shahi jeera (caraway), Fennel seeds
  11. Prepare 3 Cloves
  12. Use 1 Green cardamom
  13. Provide 1 inch stick Cinnamon
  14. Provide 1 Star anise
  15. Take 4 Black pepper
  16. Get 2 +3 Tomatoes chopped , purred
  17. Get Handful coriander and mint leaves
  18. Use 1 tsp Meat masala
  19. Provide to taste Salt
  20. You need 1 cup Water
Instructions to make Mutton curry:
  1. Dry roast the chilli powder, coriander powder and turmeric powder until a slight change in colour happens with good aroma..(you can skip this step if you are in a hurry)
  2. Wash the meat properly and rub the Curd and dry roasted spice mix and let it sit in fridge while you ready up the masala mix
  3. In a pressure cooker pour some oil and throw in the spices.. Bay leaf, shahi jeera, cinnamon,star Anise, clove and fennel seeds
  4. Now add the sliced onion and fry it till golden brown.. Then add the ginger garlic paste and Green chillies to it. Give it a good stir until the raw smell goes off.
  5. Add the chopped tomatoes to it and give a good stir and wait for them to get mushy and then add the marinated mutton from fridge and handful of coriander and mint leaves.. Stir for few minutes add the pureed tomatoes with some meat masala to it and add require water and salt
  6. Pressure cook it till 4 whistles - Garnish with coriander leaves and serve with rice or roti
