The ingredients needed to make Pumpkin Curry |Kaddu ki Sabji:
  1. Provide 300 grams chopped pumpkin
  2. Get 1 medium sized chopped onion
  3. Provide 1 medium sized chopped tomato
  4. Prepare 2-3 chopped garlic pods
  5. Get 2-3 chopped green chillies
  6. Get 1/2 tablespoon salt
  7. You need 1/2 tablespoon turmeric powder
  8. Provide 1/2 tablespoon fenugreek seeds(methi)
  9. Provide 1 pinch asafoetida (hing)
  10. Provide 6-7 curry leaves
  11. Get 1/2 tablespoon coriander powder
  12. Use 1/4 tablespoon garam masala
  13. You need 1-1/2 tablespoons dry mango(khatai) or amchoor powder(optional)
  14. Prepare 2-3 tablespoons oil
Instructions to make Pumpkin Curry |Kaddu ki Sabji:
  1. Heat a pan. Add 2-3 tbsp oil. When oil gets hot, add a pinch of asafoetida(hing) to it. After that add 1/2 tablespoon methi(fenugreek seeds) in it.Let it crackle.
  2. Now add curry leaves, chopped garlic, green chilli and chopped onion. Saute it for 2 minutes.
  3. Add 1/2 tablespoon salt,1/2 tbsp coriander powder and 1/4 tbsp garam masala.cook until onion becomes golden brown in colour. Now add chopped tomato and mix it.
  4. Cook it until tomato becomes soft.once tomato becomes soft then add chopped pumpkin.
  5. Mix it.add little water.mix it again.
  6. Cover it and cook for 7-8 minutes. After that add 1/2 tablespoon dry mango powder or amchoor in it. Cook it for 1minute.it will enhance the taste. At last, add chopped coriander leaves. Mix it.
  7. Pumpkin curry is ready to serve.
